  1. Cut the fillet steak into four round slices.
  2. Broil the steak slices before a clear fire.
  3. Mix one ounce of fresh butter with a few leaves of chopped parsley.
  4. Form the butter and parsley mixture into round balls.
  5. Place the butter balls on top of the broiled steak.
  6. Peel and slice four potatoes into a basin with salt and water.
  7. Dry the potato slices on a clean towel.
  8. Fry the potato slices in hot lard.
  9. Serve the fried potato chips around the fillets of beef.

FILLET OF BEEF WITH FRIED POTATO CHIPS. Take one pound and a-quarter of fillet steak, cut it into four round slices, broil before a clear fire; have one ounce of fresh butter mixed with a few leaves of chopped parsley; pepper and salt; form into round balls, and place on the top of the broiled steak. Serve with fried potato chips. Peel and slice four potatoes into a basin with salt and water; dry on a clean towel, and fry in hot lard. Serve round the fillets of beef.
