  1. Procure a very small leg of lamb.
  2. Cut the end of the knuckle-bone.
  3. Tie the leg of lamb in a cloth.
  4. Place the tied leg of lamb in cold water with two ounces of salt.
  5. Boil the leg of lamb gently according to size.
  6. When done, remove the cloth.
  7. Dish up the lamb with spinach under it, prepared as directed.

Boiled Leg of Lamb with Spinach.—Procure a very small leg, and cut the end of the knuckle-bone, tie it up in a cloth and place it in cold water, with two ounces of salt in it, boil it gently according to size; when done, remove the cloth, and dish it up with spinach under it, prepared as directed.
