  1. Soak sago in cold water for an hour.
  2. Pour off the soaking water and wash the sago well.
  3. Add more water and simmer gently until the sago berries are clear.
  4. Add lemon peel and spice, if desired.
  5. Add wine and sugar.
  6. Boil all together.
