  1. Take large bunches of ripe currants.
  2. Make a thin syrup with sugar and water.
  3. Set the syrup over a fire and let it boil.
  4. Put the currants into the boiling syrup and let them remain until the next day.
  5. Take the currants out carefully and lay them on a dish.
  6. Make the liquor boil again.
  7. Put the currants back into the boiling liquor, taking care not to let them break.
  8. Take the currants out a second time.
  9. Add more sugar to the syrup.
  10. Add a quart of currant juice to the syrup.
  11. Clarify the syrup.
  12. Boil the syrup until it becomes a strong syrup.
  13. When the syrup is cold, put the currants into glasses.
  14. Pour the syrup over the currants.
  15. Tie the glasses down close.

To preserve Currants. Take large bunches of ripe currants, make a thin syrup with sugar and water, set it over a fire, when it boils put in the fruit, and let them remain in a cold place till the next day; then take them out carefully, lay them on a dish, make the liquor boil again, and put in the[279] currants, taking care not to let them break. Take them out a second time, add more sugar to the syrup, with a quart of currant juice; clarify it, boil it to a strong syrup, and when it is cold put the currants into glasses, pour the syrup over, and tie them down close.
