  1. Wash the hominy in two or three waters.
  2. Pour boiling water on it and let it stand all night.
  3. Take it out and put it in a saucepan.
  4. Add one quart of hominy to two of water and boil four or five hours till quite soft.
  5. Drain it and put it into a deep dish.
  6. Stir in some butter.
  7. If any is left cold, cut it in slices and fry it.
