  1. Wash the tripe clean and put it on to boil in plenty of water with four or six onions.
  2. Boil one hour and a half.
  3. Drain off all the liquor.
  4. Mash the onions.
  5. Pour in a cupful of milk thickened with a dessertspoonful of flour.
  6. Add pepper and salt to taste, and a piece of butter the size of a nut.
  7. Mix all well together and boil ten minutes.

Tripe.—Wash it clean and put it on to boil in plenty of water with four or six onions.
