  1. Break into pieces two pounds of double-refined sugar.
  2. Put it into a stewpan, with a pint of cold spring water.
  3. When dissolved, set it over a moderate fire.
  4. Beat about half the white of an egg.
  5. Put it to the sugar, before it gets warm, and stir it well together.
  6. When it boils, take off the scum.
  7. Keep it boiling till no scum rises and it is perfectly clear.
  8. Run it through a clean napkin.
  9. Put it in a bottle well corked, and it will keep for months.

Sugar, to clarify.
