  1. Beat your eggs till they will not slip off the spoon.
  2. Melt the butter in a pint of new milk, with which mix half a pint of good yest.
  3. Strain the milk and yest mixture into the flour.
  4. Add half an ounce of caraway seeds.
  5. Work the whole up very light.
  6. Set it before the fire to rise.
  7. Make it up into buns of the size of a penny roll, handling them as little as possible.
  8. Bake them for twenty minutes.

Plain Buns. Take three pounds of flour, six ounces of butter, six ounces of sugar sifted fine, six eggs, both yolks and whites. Beat your eggs till they will not slip off the spoon; melt the butter in a pint of new milk, with which mix half a pint of good yest; strain it into the flour, and throw in half an ounce of caraway seeds. Work the whole up very light; set it before the fire to rise; then make it up into buns of the size of a penny roll, handling them as little as possible. Twenty minutes will bake them sufficiently.
