Ingredients (8)

a pound of flour, well dried and sifted ↝ Flour, 00 [Cereal Grains and Pasta]
one pound of sugar also dried and sifted ↝ Sugar, NFS [Sugars and honey]
one pound of butter, and work it in your hands till it is like cream ↝ Butter, stick, unsalted [Dairy and Egg Products]
the yolks of ten eggs ↝ Egg, yolk only, raw [Eggs and omelets]
six whites ↝ Egg, white only, raw [Eggs and omelets]
a little sack
brandy ↝ Brandy [Liquor and cocktails]
one pound of currants, washed, picked, and dried ↝ Currants, european black, raw [Fruits and Fruit Juices]

Instructions (4)

Mix flour, sugar, butter, egg yolks, and egg whites together by degrees, beating it very light.
Add sack and brandy.
It must not stand to rise.
If you choose fruit, add one pound of currants, washed, picked, and dried.

A Plain Cake.

Take a pound of flour, well dried and sifted; add to it one pound of sugar also dried and sifted; take one pound of butter, and work it in your hands till it is like cream; beat very light the yolks of ten eggs and six whites. Mix all these by degrees, beating it very light, and a little sack and brandy. It must not stand to rise. If you choose fruit, add one pound of currants, washed, picked, and dried.
