  1. Pick the currants from the stalks.
  2. Bruise them in a marble mortar.
  3. Run the juice through a flannel bag.
  4. Take two quarts of the clear juice.
  5. Dissolve in it one pound of double-refined sugar.
  6. Add one gallon of rum.
  7. Filter it through a flannel bag till quite fine.
