  1. Boil the water and sugar for one hour.
  2. Skim until clear.
  3. Let it stand until nearly cold.
  4. Pour it on the picked cowslips.
  5. Add three or four spoonfuls of new yeast.
  6. Let it stand and work in the vessel until the next day.
  7. Add the juice of thirty lemons and the peels of ten, pared thin.
  8. Stir them well together.
  9. Bung up the vessel close for a month.
  10. Bottle it.

Cowslip Wine. No. 3. Take fourteen gallons of water and twenty-four pounds of sugar; boil the water and sugar one hour; skim it till it is clear. Let it stand till nearly cold; then pour it on three bushels of picked cowslips, and put to it three or four spoonfuls of new yest; let it stand and work in your vessel till the next day; then put in the juice of thirty lemons and the peels of ten, pared thin. Stir them well together; bung up the vessel close for a month; then bottle it.
