  1. Beat the butter to a cream.
  2. Add the sugar, which need not be too finely crushed.
  3. Beat the eggs well.
  4. Add them to the butter and sugar, beating hard.
  5. Mix the soda with the milk.
  6. Mix the cream of tartar with the flour.
  7. Add to the mixture alternately.
  8. Add the sultanas and finely cut peel.
  9. Mix all very well.
  10. Bake for two hours or more in a tin lined with greased paper.
  11. The oven should be fairly hot at first and then moderate for the rest of the time.
