  1. Dot the top over with morsels of butter.
  2. Cover with a good puff-paste, decorated to taste.
  3. Bake for an hour in a moderate oven.
  4. This may be eaten hot as well as cold.
  5. If preferred, the fish may be cut up whole, the bones and skin being left on.
  6. Any white fish may be treated in this way, the addenda being varied to match.
