  1. Boil twelve gallons of water a quarter of an hour.
  2. Add two pounds and a half of loaf sugar to every gallon of water.
  3. Boil it as long as the scum rises till it clears itself.
  4. When almost cold pour it into a tub, with one spoonful of yeft.
  5. Let it work one day.
  6. Put in thirty-two quarts of cowslip flowers, and let it work two or three days.
  7. Put it all into a barrel, with the parings of twelve lemons and the same of oranges.
  8. Make the juice of the lemons and oranges into a thick syrup, with two or three pounds of loaf sugar.
  9. When the wine has done working add the syrup to it.
  10. Stop up your barrel very well.
  11. Let it stand two or three months, and then bottle it.

A second Way to make Cowslip Wine. BOIL twelve gallons of water a quarter of an hour, then add two pounds and a half of loaf sugar to every gallon of water, then boil it as long as the scum rises till it clears itself, when almost cold pour it into a tub, with one spoonful of yeft, let it work one day, then put in thirty-two quarts of cowslip flowers, and let it work two or three days, then put it all into a barrel, with the parings of twelve lemons, the same of oranges, make the juice of them into a thick syrup, with two or three pounds of loaf sugar; when the wine has done working add the syrup to it, then stop up your barrel very well, let it stand two or three months, and then bottle it.
