  1. Take a pound of red gooseberries when they are full grown and turned, but not ripe, cut them in halves, pick out all the seeds.
  2. Have ready a pint of currant juice.
  3. Boil your gooseberries in it till they are tender.
  4. Put a pound and a half of double refined sugar into your pan, with as much water as will dissolve it, and boil it to sugar again.
  5. Then put all together and make it scalding hot, but it must not boil.
  6. Pour it into plates or glasses the thickness you like, then dry it in a stove.

To make GOOSEBERRY Paste. TAKE a pound of red gooseberries when they are full grown and turned, but not ripe, cut them in halves, pick out all the seeds, have ready a pint of currant juice, boil your gooseberries in it till they are tender, put a pound and a half of double refined sugar into your pan, with as much water as will dissolve it, and boil it to sugar again, then put all together and make it scalding hot, but it must not boil, pour it into plates or glasses the thickness you like, then dry it in a stove.
