  1. Pare four large lemons and boil the peels in six quarts of water and a little ginger cut fine.
  2. Boil them a quarter of an hour.
  3. Then add to it three pounds of sugar.
  4. When it is cold put in the juice of the lemons and strain it.

To make fine SHERBET a second Way. PARE four large lemons and boil the peels in six quarts of water and a little ginger cut fine, boil them a quarter of an hour, then add to it three pounds of sugar, and when it is cold put in the juice of the lemons and strain it, and it is fit for use.
