  1. Take a pound of apricots, pare and stone them.
  2. Put them in your tossing-pan.
  3. Pound and sift half a pound of double refined sugar.
  4. Strew a little sugar amongst the apricots, and lay the rest over them.
  5. Let them stand twenty-four hours.
  6. Turn them three or four times in the syrup.
  7. Boil them pretty quick till they look clear.
  8. When they are cold take them out, and lay them on glasses.
  9. Put them into a stove, and turn them every half hour.
  10. The next day turn them every hour.
  11. After as you see occasion, turn them.

To dry Apricots. TAKE a pound of apricots, pare and stone them, put them in your tossing-pan, pound and sift half a pound of double refined sugar, strew a little amongst then, and lay the rest over them; letthem stand twenty-four hours, turn them three or four times in the syrup, then boil them pretty quick till they look clear, when they are cold take them out, and lay them on glasses, put them into a stove, and turn them every half hour, the next day every hour, and after as you see occasion.
