  1. Put two ounces of cream of tartar into a large jar, with the juice and peels of two lemons.
  2. Pour on them seven quarts of boiling water.
  3. When it is cold clear it through a gauze sieve, sweeten it to your taste, and bottle it.
  4. It will be fit to use the next day.
