  1. Boil the rind of a Seville orange very soft.
  2. Beat the rind in a marble mortar, with the juice.
  3. Add two Naples biscuits grated very fine, half a pound of butter, a quarter of a pound of sugar, and the yolks of six eggs.
  4. Mix them well together.
  5. Lay a good puff paste round the edge of your China dish.
  6. Bake it in a gentle oven half an hour.

An ORANGE PUDDING. BOIL the rind of a Seville orange very soft, beat it in a marble mortar, with the juice, put to it two Naples biscuits grated very fine, half a pound of butter, a quarter of a pound of sugar, and the yolks of fix eggs, mix them well together, lay a good puff paste round the edge of your China dish, bake it in a gentle oven half an hour: you may make a lemon pudding the same way, by putting in a lemon instead of the orange.
