  1. Scald your pigeons, draw them, take the craw clean out, wash them in several waters, cut off the pinions, turn the legs under the wings, dredge them, and put them in soft cold water.
  2. Boil them very slowly a quarter of an hour.
  3. Dish them up, pour over them good melted butter, lay round them a little brocoli in bunches, and send parsley and butter in a boat.
