  2. Peel it, and put it in again, let it simmer and boil till it is green.
  3. Take it up, and dry it with a cloth.
  4. Put your stalks into an earthen pan, beat the sugar and strew over them, let it stand two days.
  5. Boil it till it is clear and green.
  6. Put it in a cullendar to drain.
  7. Beat a pound of sugar to a powder again, strew it on your angelica, lay it on plates to dry, and set them in the oven after the pies are drawn.

To candy ANGELICA. TAKE it when young, cut it in lengths, cover it close, and boil it till it is tender, peel it, and put it in again, let it simmer and boil till it is green, then take it up, and dry it with a cloth; to every pound of stalks put a pound of sugar; put your stalks into an earthen pan, beat the sugar and strew over them, let it stand two days, then boil it till it is clear and green, put it in a cullendar to drain; beat a pound of sugar to a powder again, strew it on your angelica, lay it on plates to dry, and set them in the oven after the pies are drawn.—Three pounds and a half of sugar is enough for four pounds of stalks.
