  1. Take young Codlings, gut and dry them well with a cloth.
  2. Fill their eyes full of salt.
  3. Throw a little salt on the back-bone.
  4. Let them lie all night.
  5. Hang them up by the tail a day or two.
  6. As you have occasion for them, boil them in spring water.
  7. Drain them well.
  8. Dish them up.
  9. Pour egg sauce on them.
  10. Send them to the table.

To dress young Codlings like SALT FISH. TAKE young Codlings, gut and dry them well with a cloth, fill their eyes full of salt, throw a little on the back-bone, and let them lie all night, then hang them up by the tail a day or two: as you have occasion for them, boil them in spring water, and drain them well, dish them up, and pour egg sauce on them, and send them to the table.
