  1. Beat six eggs well.
  2. Put the beaten eggs into three gills of new milk, sugar, cinnamon, and lemon peel to your taste.
  3. Set it over the fire.
  4. Keep stirring it.
  5. Squeeze a quarter of a lemon in it to turn it to cheese.
  6. Let it run into what shape you would have it.
  7. When it is cold, turn it out.
  8. Pour over it a little almond cream, made of sweet almonds beat fine with a little cream.
  9. Put them into a point of cream.
  10. Let it boil and strain it.
  11. Put to it the yolks of three eggs well beat.
  12. Set it over the fire and make it like a custard.
