To make GREEN GOOSEBERRY JAM.
TAKE the green walnut gooseberries when
they are full grown, but not ripe, cut them in
two and pick out the seeds, then put them in a
pan of water, green them as you do the gooseber-
ries in imitation of hops, and lay them on a
sieve to drain, then beat them in a marble mor-
tar, with their weight in sugar, then take a quart
of gooseberries, boil them to mash in a quart
of water, then squeeze them, and to every pint
of liquor put a pound of fine loaf sugar, boil
and skim it, then put in your green gooseberries, boil
boil them till they are pretty thick, clear, and a
pretty green, then put them in glasses for use.
