  1. To every gallon of water add four pounds of honey, boil it three quarters of an hour, and scum it as before.
  2. To each gallon add half an ounce of hops, then boil it half an hour, and let it stand till the next day.
  3. Then put it in your cask, and to thirteen gallons of the above liquor add a quart of brandy or sack.
  4. Let it be lightly closed till the fermentation is quite done, then make it up very close.
  5. If it be a large cask let it stand a year before you bottle it.
