  1. Scald and draw your ducks.
  2. Put them in warm water for a few minutes.
  3. Take them out, put them in an earthen pot.
  4. Pour over them a pint of boiling milk.
  5. Let them lie in it two or three hours.
  6. When you take them out, dredge them well with flour.
  7. Put them in a copper of cold water.
  8. Put on your cover.
  9. Let them boil slowly twenty minutes.
  10. Take them out, and smother them with onion sauce.

To boil Ducks with Onion Sauce. SCALD and draw your ducks, put them in warm water for a few minutes, then take them out, put them in an earthen pot, pour over them a pint of boiling milk, let them lie in it two or three hours; when you take them out dredge them well with flour, put them in a copper of cold water, put on your cover, let them boil slowly twenty minutes, then take them out, and smother them with onion sauce.
