  1. Scale, gut, and wash your perch.
  2. Put salt in your water.
  3. When the water boils, put in the fish, with an onion cut in slices (separated into round rings), and a handful of parsley (picked and washed clean).
  4. Add enough milk to turn the water white.
  5. When your fish are cooked enough, put them in a soup dish.
  6. Pour a little of the cooking water over them with the parsley and the onions.
  7. Serve them up with butter and parsley in a boat.
  8. Onions may be omitted if you please.

To dress PERCH in WATER SOKEY. SCALE, gut, and wash your perch, put salt in your water, when it boils put in the fish, with an onion cut in slices, you must separate it into round rings, a handful of parsley picked and washed clean, put in as much milk as will turn the water white, when your fish are enough, put them in a soup dish, and pour a little of the water over them with the parsley and the onions, then serve them up with butter and parsley in a boat, onions may be omitted if you please. You may boil trout the same way.
