  1. Beat very well the yolks of ten eggs, and the whites of five, with four spoonfuls of orange-flower water, till they froth up.
  2. Put in a pound of loaf sugar sifted.
  3. Beat it one way for half an hour or more.
  4. Put in half a pound of flour, with the raspings of two lemons, and the pulp of a small one.
  5. Butter your tins and bake it in a quick oven, but do not stop up the mouth at first for fear it should scorch.
  6. Dust it with sugar before you put it into the oven.
  7. It is soon baked.
