  1. Gather elder-berries when they are full ripe.
  2. Pick them clean from the stalks.
  3. Put them in large stew pots.
  4. Tie a paper over them.
  5. Put them in a moderate oven.
  6. Let them stand two hours.
  7. Take them out, and put them in a thin coarse cloth.
  8. Squeeze out all the juice you can get.
  9. Put eight quarts [of juice] into a well-tinned copper.
  10. Set it over a slow fire.
  11. Let it boil till it be reduced to one quart.
  12. When it grows near done, keep stirring it to prevent its burning to the bottom.
  13. Put it into potting pots.
  14. Let it stand two or three days in the sun.
  15. Dip a paper in sweet oil the size of your pot, and lay it on.
  16. Tie it down with a bladder.
  17. Keep it in a very dry place for use.
