  1. When the apples are cold, peel and core them.
  2. Rub the pulp through a sieve with the back of a wooden spoon.
  3. Beat the apple pulp light with fine sugar, well sifted, to your taste.
  4. Beat the whites of four eggs with orange-flower water in another bowl till it is a light froth.
  5. Mix the egg whites with the apples a little at a time till all is beat together and exceeding light.
  6. Make a rich boiled custard.
  7. Put the custard in a china or glass dish.
  8. Lay the apples all over the custard.
  9. Garnish with currant jelly, or what you please.

BAKE fix or eight very large apples, when they are cold peel and core them, rub the pulp through a sieve with the back of a wooden spoon, then beat it up light with fine sugar, well sifted, to your taste; beat the whites of four eggs with orange-flower water in another bowl till it is a light froth, then mix it with your apples a little at a time till all is beat together, and exceeding light; make a rich boiled custard, and put it in a china or glass dish, and lay the apples all over it. Garnish with currant jelly, or what you please.
