  1. Put four large raw whole eggs into a stewpan with a saltspoonful of vanilla essence, five ounces of castor sugar, the very finely-chopped peel of one and a half oranges, and half a teaspoonful of Marshall's Carmine.
  2. Whip this mixture over boiling water on the fire till it is warm.
  3. Remove the tin from the fire and continue whipping the ingredients till they are cold and thick like stiffly-whipped.
