Lemon-Water Ice
One pint of boiling water poured on to the peel of eight
lemons, half a pound of loaf sugar; when cool mix with
the juice of six lemons, add six drops of Marshall's Lemon
Essence, tammy, or strain through sieve, and freeze.

often referred to in this volume.]
The peel of the lemons can afterwards be used for
puddings, &c.
