  1. Mix the cream, castor sugar, vanilla seeds, rose water, Maraschino liqueur, and Marshall's Vanilla Essence.
  2. Pound half a pound of crystallised violets into a paste and mix it with the cream.
  3. Add enough Marshall's Damson Blue (first mixing the colour into a smooth paste with a little milk) to colour to the desired shade.
  4. Rub all through a clean tammy cloth.
  5. Pour the mixture into the charged freezer.
  6. Freeze it to the consistency of a very thick batter.
  7. Put it into a long bomb mould.
  8. Place this into the charged ice cave for three and a half to four hours.
  9. Turn out the ice in the usual way on a dish-paper on to a dish.
  10. Garnish with snow cream (see recipe) or with spun sugar (see recipe) and press into the spun sugar.
