  1. Fill the ice-water cups three parts full with plain or coloured cold water.
  2. Fix on the covers and put the moulds on the bottom of the charged ice-cave for two and a half to three hours.
  3. Then take up, dip each shape separately into cold water, and turn out the cups on to a clean dry cloth.
  4. Use for a sorbet, or they can also be filled with custard or fruit ices if liked.
