MERINGUE BORDER FOR ELLEN TERRY MELON.— Whip six whites of eggs with a pinch of salt till stiff, then mix with three-quarters of a pound of castor sugar, and put it into a forcing bag with a plain pipe; force the mixture out on to cold waxed tins in the shape of rings, dust over with castor sugar, and then bake in a moderate oven till a fawn colour; set them aside till cold, then mask with coffee glace (see recipe) and arrange on the dish on which the ice is to be served.
