  1. Gently part the herring roes with a knife.
  2. Put the roes into a shallow pie-dish with a little pepper and butter.
  3. Cover with a dish cover and stand in the oven for ten minutes.
  4. Have ready hot buttered toast.
  5. Lay the roes on the toast.
  6. Put a little white pepper on them and a tiny scrap of butter.
  7. Replace in the oven for a moment before serving.

Herring Roes on Toast Take the roes from the tin or glass box, gently part with a knife, put them into a shallow pie-dish with a little pepper and butter. Cover with dish cover and stand in the oven for ten minutes. Have ready hot buttered toast and lay the roes on the [Pg 31]toast. Put a little white pepper on them and a tiny scrap of butter and replace in the oven for a moment before serving.
