  1. Mix the yolks of 4 eggs with flour into a thinnish paste in a stewpan.
  2. Gradually add and mix pt. cream and pt. milk with this paste.
  3. Boil the mixture for about 10 minutes.
  4. Pass the mixture through a sieve.
  5. Season well.
  6. Shape in a sauté pan into tiny marbles.
  7. Poach for 15 minutes, just before serving the soup.

Quenelles. No. 7. "Princess" Quenelles. "Appareil a la Princesse." (Cataldi.) The yolks of 4 eggs in a stewpan mixed with flour into a thinnish paste. pt. cream, pt. milk, are to be gradually added and mixed with this paste. Boil the mixture for about 10 minutes, then pass it through a sieve; season well; shape in a sauté pan into tiny marbles and poach 15 minutes, just before serving the soup.
