Russian Pudding. (Beechwood.)
Put the following ingredients in a buttered mould: 12 penny
sponge biscuits, soaked in a glass of sherry, 8 tablespoonfuls of
red currant jelly, and 3 of apricot jam or apple jelly, a few stoned
raisins, a few pieces of candied orange and lemon peel, the yolks
of 5 eggs and the whites of 3; all well mixed together.
Boil 4 hours or steam 2 hours, and serve with German Sauce
(see Sweet Sauces).
