  1. Have the omelet pan ready heated and just greased with fresh butter.
  2. Put in 4 whole eggs, previously seasoned and beaten in a basin, a tablespoonful of cream, a teaspoonful only of milk.
  3. Give one stir round and very gradually draw the omelet to the side of the pan by tilting it; do not either turn or fold it.
