  1. Peel the mushrooms and put them into water to clear from grit, but take them out immediately to drain on a sieve.
  2. Place them, bottom upwards, on a baking sheet, and put in each piece of butter the size of a hazel nut; season with pepper and salt.
  3. Bake till done, then dish them with their liquor.
