Cheese—“Favorites à la Parmesan.” (Lady Playfair. 1887.)
2 ozs. Parmesan cheese, 2 tablespoonfuls of cream, 4 tablespoonfuls of milk, 4 yolks of egg, and 1 white only.
Flavour to taste with cayenne pepper and salt.
Bake 15 minutes in small patty-pans in a sharp oven; turn out. This glazes over in the oven, has no flour in it, and is a kind of custard.
