Cocoa—Professor Smyth's. (Mrs. Gregg.) 1 tablespoonfuls of pounded cocoa to 1 qt. of water. It will be to a pint in the course of an hour. Slowly skim it and pour it through a colander; it should be quite clear from sediment when served, and very hot; make it the night before and heat up.
