  1. Pare and core the pears.
  2. Cut into quarters, let them simmer for half an hour in a little water and sugar.
  3. Melt the butter in a sauce-pan.
  4. Add the flour.
  5. Work till perfectly smooth.
  6. Add the wine, and when hot, the pears and juice.
  7. Simmer again for half an hour.
  8. Lay the pears on rounds of fried bread.
  9. Strain the juice over them and serve hot.
