  1. Gather hips before they grow soft.
  2. Cut off the heads and stalks.
  3. Slit them in halves.
  4. Take out all the seeds and white that is in them very clean.
  5. Put them into an earthen pan.
  6. Stir them every day, or they will grow mouldy.
  7. Let them stand till they are soft enough to rub them through a coarse hair-sieve.
  8. As the pulp comes take it off the sieve.

To make Conserve of Hips. GATHER hips before they grow soft cut off the heads and stalks, slit them in halves, take out all the seeds and white that is in them very clean, then put them into an earthen pan, and stir them every day, or they will grow mouldy.
