  1. Wipe the plumbs, prick them in the seams, put them in a pitcher, and let them in a little boiling water.
  2. Let them boil very tender, then pour most of the liquor from them, then take off the skins and the stones.
  3. To a pint of the pulp add a pound of sugar well dried in the oven.
  4. Let it boil till the scum rise, which take off very clean.
  5. Put into earthen plates, and dry in an oven, and so fill the plumbs.

For Filling for the abovesaidmentioned Plumbs.
