  1. If just killed, roast for an hour.
  2. If killed the day before, roast for an hour and a quarter.
  3. If a very large one, roast for an hour and a half.
  4. The best way to judge is when the eyes drop out, and the skin is grown very hard.
  5. Then you must rub it with a coarse cloth, with a good piece of butter rolled in it, till the crackling is crisp and of a fine light brown.
