  1. Peel the stalks to the pith.
  2. Put the pith in a strong brine three or four days.
  3. Take them out of the brine.
  4. Boil them in water very tender.
  5. Dry them with a cloth.
  6. Put them into as much clarified sugar as will cover them.
  7. Preserve them as you do oranges.
  8. Take them and let them to drain.
  9. Take fresh sugar and boil it to the height.
  10. Take them out and dry them.

To dry Lettuce-stalks, Artichoke-stalks, or Cabbage-stalks. PEEL the stalks to the pith, and put the pith in a strong brine three or four days; then take them out of the brine, boil them in water very tender, then dry them with a cloth, and put them into as much clarified sugar as will cover them, and so preserve them as you do oranges; then take them and let them to drain; then take fresh sugar, and boil it to the height; take them out and dry them.
