To dry Lettuce-stalks, Artichoke-stalks, or Cabbage-stalks.
PEEL the stalks to the pith, and put the pith in a strong brine
three or four days; then take them out of the brine, boil them
in water very tender, then dry them with a cloth, and put them
into as much clarified sugar as will cover them, and so preserve
them as you do oranges; then take them and let them to drain;
then take fresh sugar, and boil it to the height; take them out
and dry them.
