  1. Put your quinces in boiling water unpared, boil them apace uncovered, till they discolour.
  2. When they are boiled, pare them.
  3. Beat them very tender with sugar.
  4. Then take cream, and mix it till it is pretty thick.
  5. If you boil your cream with a little cinnamon, it will be better, but let it be cold before you put it to your quince.

Quince Cream. PUT your quinces in boiling water unpared, boil them apace uncovered, till they discolour when they are boiled, pare them, beat them very tender with sugar; then take cream, and mix it till it is pretty thick; if you boil your cream with a little cinna- mon, it will be better; but let it be cold before you put it to your quince.
