  1. Steep the blanched Jordan almonds in the sweet cream, egg yolks, and egg whites.
  2. Remove the almonds from the cream mixture and pound them finely in a mortar.
  3. Return the pounded almonds to the cream and egg mixture.
  4. Add sugar and grated white bread, and stir well together.
  5. Add more fresh butter to a hot pan.
  6. Pour the mixture into the hot pan and stir constantly until it reaches a good thickness.
  7. Once cooked, turn the mixture into a serving dish.
  8. Sprinkle sugar over the top and serve.

To make an Almond Fraze. GET a pound of Jordan almonds blanched, steep them in a pint of sweet cream, ten yolks of eggs, and four whites, take out the almonds and pound them in a mortar fine; then mix them again in the cream and eggs, put in sugar and grated white bread, stir them well together; put more fresh butter into the pan, let it be hot and pour it in, stirring it in the pan till they are of a good thickness; and when it is enough, turn it into a dish, throw sugar over it, and serve it up.
