  1. Peel the potatoes and cut them in pieces into the form of olives.
  2. Put the cut potatoes into cold water with a little salt.
  3. When required to cook, put them in the saucepan with enough cold water to cover them and a pinch of salt.
  4. Boil till tender, taking care that they do not break.
  5. Take them out and drain them.
  6. Dish them in a round.
  7. Pour onion purée over them, and serve.

Boiled Olive Potatoes with Onion Purée. (Pommes de Terre Olives à la Purée d'Oignons.) PEEL the potatoes and cut them in pieces into the form of olives, and put them into cold water with a little salt. When required to cook, put them in the saucepan with enough cold water to cover them and a pinch of salt; boil till tender, taking care that they do not break; take them out, drain them, and dish them in a round; pour onion purée over them, and serve.
